For a Strawberry Shortcake, you will need:
One 8-inch round cake pan, lightly coated with cooking spray
- 1 cup sliced strawberries, about 16 small berries

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 pinch salt
- 6 tablespoons unsalted butter, softened
- 1 egg, beaten
- 1 1/2 teaspoons vanilla extract
For the Cream Cheese Frosting: 1 (8 ounces) package of cream cheese, room temperature, 3 tablespoons milk.

Do not let it come to a full boil! It needs to be just warm enough to pour (120 degrees F.) If using cornstarch, substitute for 3 tablespoons of the liquid when adding to the milk. Stir and continue to stir over medium heat until the mixture thickens and reaches 240 degrees F.
Set aside to cool. Preheat the oven to 375 degrees F. Coat an 8-inch round cake pan (or another round pan that is at least 2 inches deep) with cooking spray. Line the bottom and two long sides of the pan with parchment paper.
